Nutritionists have long touted kale as a superior vegetable for its many health benefits. Now its cousins bok choy, broccoli, brussels sprouts, and especially cauliflower are found to be equally as beneficial. These vegetables which are called cruciferous vegetables are among the most nutritious because they are rich in certain vitamins and minerals that have unique disease fighting compounds that are known to break down into cancer-protecting compounds.
