CRUCIFEROUS VEGETABLES PROMOTE HEALTH

Friday, February 24th, 2017

Nutritionists have long touted kale as a superior vegetable for its many health benefits. Now its cousins bok choy, broccoli, brussels sprouts, and especially cauliflower are found to be equally as beneficial. These vegetables which are called cruciferous vegetables are among the most nutritious because they are rich in certain vitamins and minerals that have unique disease fighting compounds that are known to break down into cancer-protecting compounds. This family of veggies stand out for the abundance of vision protecting carotenoids as well as fiber, folate, potassium, and vitamins C, E, and K.  Some of these nutrients may also control inflammation and protect against heart attack.  Refer to your favorite cookbook to find recipes that include these veggies.  Comfort Cooking Without Grains and Refined Sugars has 2 wonderful soup recipes that include these vegetables.  Like us on Facebook.
