33/4 cups blanched almond flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground cloves

1/4 teaspoon ground nutmeg

1/4 teaspoon kosher salt

1 egg

1/2 cup farmer cheese, packed

1/2 cup clover honey

1 teaspoon unsweetened natural vanilla extract

1 cup organic applesauce

1/2 cup raisins

1/2 cup chopped nuts

1.  Position rack in the upper third of oven.  Preheat oven to 325 degrees F.  Line a 12-cup muffin pan with paper cups.  (For larger muffins, line only 10 muffin cups.)
2.  In a medium bowl, combine almond flour, baking soda, cinnamon, cloves, nutmeg, and salt, breaking up any lumps of flour.  Make a well in the center of mixture.  Set aside.
3.  Using a blender, mix egg, cheese, honey, and vanilla until well blended.  Pour into center well of dry ingredients; mix.  Add applesauce; mix gently until well blended.  Fold in raisins and nuts.  Fill muffin cups.
4.  Bake 30 to 35 minutes, or until a toothpick inserted into the center of a muffin comes out clean.  Cool in pan 5 minutes before moving to a rack to cool completely.  Like us on Facebook.
