DELICIOUS GLUTEN-FREE ROLLS

The secret to shaping these rolls is to chill the dough overnight.  This makes it easy to shape the rolls into dinner, hot dog, hamburger, pitas or however else you want.

4 cups blanched almond flour

11/2 teaspoons baking soda

1/2 teaspoon fine sea salt

1 cup Farmer cheese

3/4 cup pasteurized liquid egg whites

1 tablespoon apple cider vinegar

2 teaspoons clover honey

1 teaspoon finely grated lemon zest

1.  In a large bowl, combine almond flour, baking soda and salt.  Set aside.

2.  Place cheese, egg whites, vinegar, honey, and lemon zest into a food processor.  Pulse until bubbles appear on surface of mixture.  Slowly add dry ingredients one-third at a time, mixing after each addition.  Mix until completely blended, scraping down sides of bowl.

3.  Wrap dough  in plastic wrap and chill overnight.

4.  Next Day:  Position rack in the upper third of oven.  Preheat oven to 350 degrees F.  Line a baking sheet with parchment paper.

5.  Cut off 10 pieces of dough; shape each piece into the desired shape.

6.  Bake about 25 minutes or until a toothpick inserted into the center comes out clean.  Remove to a rack to cool completely.

Yield:  10 rolls
