This is a comforting soup to chase away the winter blues.  It can be made in large quantities and frozen for future meals.



2 pounds dried split peas, sorted, rinsed, and soaked overnight

3 quarts water

l ham bone

1 large onion chopped

2 large carrots, chopped

2 bay leaves

1 tablespoons of freshly squeezed lemon juice

Kosher salt to taste

1/4 teaspoon freshly ground pepper

Drain and rinse peas twice.  In a large pot, combine all ingredients except lemon juice,  salt and pepper.  Bring to a boil.

Reduce heat to medium-low; cover.  Simmer about 4 hours, stirring occasionally, or until peas have dissolved.  Remove bay leaves. Mix in lemon juice, salt and pepper.  Heat through and serve.

Yield:  5 quarts

Tip:  If soup is too thick for your use, add more water.
