If you love biscuits, this is a wonderful grain-free, gluten-free recipe that your whole family will enjoy.

4 cups blanched almond flour

11/2 teaspoons baking soda

1/2 teaspoon fine sea salt

1 cup farmer cheese

3/4 cup pasteurized liquid egg whites

1 tablespoon apple cider vinegar

2 teaspoons clover honey

1 teaspoon finely grated lemon zest

  1. Position rack in the upper third of oven.   Preheat oven to 350∞ F.   Line a 12-cup muffin pan with paper cups.
  2. In a large bowl, combine almond flour, baking soda and salt.  Set aside.
  3. Place cheese, egg whites, vinegar, honey and lemon zest into a food processor.  Pulse until bubbles appear on surface of mixture.  Slowly add dry ingredients one-third at a time, mixing after each addition.  Mix until completely blended, scraping down sides of bowl.
  4. Fill muffin cups.  Dip your fingertips into some liquid egg whites and gently smooth tops.  Bake 25 to 30 minutes or until a toothpick inserted into the center comes out clean.  Remove biscuits from pan to a rack to cool completely.  When cool, remove paper liners.

Yield:  12 Biscuits
