GRAIN-FREE AND GLUTEN-FREE COOKIE RECIPE

Here is a great recipe that is a spin-off of a cookie recipe in my book, Comfort Cooking Without Grains and Refined Sugars.  You will love it.

 Chocolate Walnut Balls

                                                                              Yield:  2 dozen

 1/4 cup (1/2 stick) unsalted butter, at room temperature

1/2 cup plus 3 tablespoons clover honey

1 teaspoon natural unsweetened vanilla extract

1 small egg

23/4 cups blanched almond flour

1/2 cup sifted unsweetened cocoa powder

1/2 teaspoon fine sea salt

1/2 cup chopped walnuts 

1.   In a large bowl, beat butter, honey and vanilla.  Add egg; beat until well blended.  Stir in almond flour, cocoa powder and salt.  Mix just until dough forms.      Wrap in plastic wrap.  Refrigerate 2 hours or overnight.

2.  Position rack in the center of oven.  Preheat oven to 300º F.   Line 2 baking sheets with baking parchment paper.

3.   Using your palms, roll dough into 1-inch balls; then roll in walnuts.  Place onto the prepared pans, spacing 2-inches apart.

4.   Bake, 1 sheet at a time, 10 to 15 minutes. Cool in pan 5 minutes before removing to a rack to cool completely.
