LIVING GRAIN AND GLUTEN-FREE USING PLANTAINS

For those of us on a grain-free and gluten-free diet, plantains are a great way to satisfy hunger.  Although they look like bananas, they are always cooked to be eaten.  Plantains are high in fiber, a good source of potassium with Vitamins A, B6, and C.  They are available year round in the fresh produce section of most supermarkets. Plantains can be used in a variety of ways such as in pancakes, pie crust, pasta, pizza, soups, salads, side dishes and also as a thickening agent for gravy.
