About the Author

Eleanor Fahey is a professional home economist. She holds a Bachelor of Science degree from Rutgers University and completed additional studies at Kean University. Foods and nutrition have been her main interest for most of her life. She taught foods and nutrition at a public high school for more than a decade. During her teaching career, she also conducted classes in early childhood education, during which she directed a nursery school for 3- and 4-year-old preschool children. During this time, she became aware that many children, as well as adults, suffered with digestive problems caused by food allergies. From personal experience, Eleanor found that very few, if any, cookbooks for grain-free and refined sugar-free cooking were available on the market to help individuals and families facing this challenge. She wrote this cookbook to help fill the void. Her cookbook, which took seven years to develop, is part of her daily diet. The author has three grown children and lives with her husband in New Jersey.
